How far could i overclock a Barton 2500+ using just the retail fan?
That would be hard to say. There are many variables.
1. How hot is the CPU running now?
2. What is your case temperature?

I have mine running at 2200 (11x200fsb) which gives me a XP3.2+ :D. To start with, I was using the stock hsf that came with the retail pack. It was getting upto about 50c.
I now have a coolermaster hsf rated for a XP3200, my temps are 40c under 100% load running FAD DC client. The hsf cost £8.50 from EBuyer UK - Well worth it IMO
AFAIK - Practically all 2.5 bartons can be overclocked to 3.2 - You will need a mobo to unlock the multipliers of course.

thats a good value if u ask me, man i love thoses AMD chips, seem like great OCers
i run my 2400+ at 2.12ghz, just popped it into my ASUS mobo and here i am at 2.12 never had a system lockup or crash,
GL with ur 2500+ sounds like a great CPU from waht ive been reading
