I got bored and started looking at . Why would a MOBO have
multiple LAN connections?

Internet connection sharing, using the PC for a router, etc etc, maybe some one is using network attached storage device & doesn't want it on the main network, & using on a secondary one? many uses.

there's some Mini ITX mobo's with 4 or more, many of those are used as a Linux based router or things like that too.

I have a board like this and its like this: You have two connectors. One for internet because its dedicated and the other is used for local network access. This means I can access files fast and keep my latency low on both connections.

Or this way: Two lan connections double speed on several files.
